Title: Stuffed Potato Skins

Yield: 16 Quarters

1/2lbBeef, ground
3/4cJack cheese, shredded
1/2cRanch dressing
1/4cOlives, ripe and sliced
1tbGreen chiles, chopped
16 Potato skin quarters, cooked

In a medium bowl stir together the beef, 1/2 cup of the cheese, ranch dressing, olives and green chiles until well blended. Using a spoon, put approximately 2 T filling on each potato skin. Sprinkle potato skins with the remaining 1/4 cup cheese. Broil 6" from heat for 3 to 5 minutes or until hot and cheese is melted. Makes 16
